April Meal Plan: 10 Recipes with Seasonal Florida Produce

Maybe it’s the produce-packed recipes in this April meal plan. Maybe it’s the warm weather. Whatever the cause, I’m ready to sit on the patio, look at the water and enjoy some al fresco meals with family and friends.

After all, spring in North Florida is something to behold. Beautiful weather, the salt air, the anticipation of summer to come…it all makes me grateful to be a Floridian! One of the things I’m most looking forward to this spring? Browsing the farmer’s market (or, on busier weeks, my local Publix) for the latest in fresh Florida produce.

April brings lots of fresh fruits and veggies and I can’t wait to dig into a vibrant, colorful plate. This month’s To Cook list features a 10 recipes I can’t wait to try, all featuring seasonal ingredients.

It’s not avocado season yet, but. it’s coming! Avocado season starts up in June and runs through January in Florida.

From blueberries to peaches to watermelon, there’s no shortage for fresh produce to cook with in April. These recipes incorporate plenty of in-season ingredients and many use ingredients you probably already have in your stocked pantry. Here’s what I’m cooking in April.

It’s golf season and that means one thing: Soaking in the coverage of the Masters Tournament. I’m always looking for an easy-to-prep dinner option, and this Kung Pan Cauliflower from How Sweet Eats looks like a great addition to the rotation. Just add rice and some veggies for the the perfect meal.

Guava Margarita

There’s nothing better than a margarita on warm evening, and this Guava Margarita from A Sassy Spoon looks like the perfect way to kick off patio season. Guava nectar is the star here, along with coconut water, lime and, of course, tequila.

Cantaloupe Panzanella Salad

Swap tomatoes for cantaloupe? I’m intrigued. This twist on classic panzanella from California Cantaloupes looks like an excellent addition to my next barbecue.
